1 - Origin

There is often much debate over the origin of sriracha, and whether it is Thai or Vietnamese. While it is used all over Southeast Asia, it is most known for being in Vietnamese and Thai cuisine. Sriracha actually originated in Thailand, the original recipe being from a housewife in the 1930s, and spread over to the western world via a Vietnamese refugee named David Tran. From there, he spread and grew sriracha as a condiment, and now it is a popular sauce in both the western and asian market.

In Thailand, sriracha is more often used as a dipping sauce. Original Thai sriracha is said to be tangier in taste, and runnier in texture than ones made elsewhere. The dipping sauce can be used for seafood and omelets.

In Vietnam, the spicy condiment can be most commonly seen in phở and fried noodles. For phở soups, sriracha is presented along with hoisin sauce as condiments to add to your phở noodles. 

Now that sriracha is popular overseas, many American and western food chains and restaurants have found ways to incorporate it into their dishes, sometimes mixing it with other condiments such as mayonnaise. 

Sriracha can also be mixed with other ingredients (sugar, garlic powder etc) and be used like that as dipping sauce or even as marinades. Sriracha can come in different varieties, and you can buy different types that are spicier or one with extra add-ins like more garlic or even lemongrass. 

3 - Types of sriracha

As said before, the original Thai sriracha, also called “Rooster Sauce” is said to be tangier in taste and runnier in texture. One of the most famous companies for sriracha, founded by David Tran, is Huy Fong Sriracha. Huy Fong sriracha is one of the more thicker sriracha sauces out there, and although it is quite sweet, it has a decent amount of spice and tang to it. 

A known competitor of Huy Fong is Flying Goose Sriracha. This is another classic company for sriracha sauce, and has a similar texture to Huy Fong. Its flavour isn’t as sweet, but it is still just as spicy as Huy Fong’s sriracha.
